Fall is here! Ah, a respite from that heat this summer. I am all over this cooler weather; perfect for walking. Luna and I are having a lovely time…she is so much more spry, my little puppy of 8.
Lots of apples in house so while dithering on what kind of treat I was going to make I came across this old favorite recipe. I’ll put the photo up first so it can whet your appetite. Easy and about the best (maybe) apple thing.
Now, I know this doesn’t look like much but omg, moist, apple tasting, the crust is magnificent! Tons of flavor there.
Get out the mixer, turn the oven on to 325 or 350. Your going to bake this for 1 hour and 15 minutes or perhaps 1-1/2 hours at 325. Grease a 9 or so inch pan.
1.5 C. vegetable oil
2 C. sugar
2 C. Unbleached flour
1 C. whole wheat flour
1/8th tsp cloves
1-1/2 tsp. cinnamon
1 tsp. baking soda
3/4 tsp. salt
Put in mixer with above, keep mixing, add:
1 C. chopped walnuts
4 C. chunked apples, skin and all after you wash them well
3 Tbs. apple cider vinegar syrup (I got this from King Arthur and hadn’t used it yet) OR: 3 TBS. Calvados or other liquor of similar quality
When just about done mix up this glaze and apply while still hot out of the oven:
2 Tbs. butter
2 Tbs. or so dark, dark brown sugar
3 Tbs. Rum or Cider or that amazing reduced apple vinegar!
Some OJ, few tablespoons or not
Splash of 1/2 & 1/2 or heavy cream
Your looking for just a nice liquid, tasty thing to pour over and crystallize on
I melt the butter in the microwave then add the rest and melt up and blend. Pour over.
The really nice part of this cake or rather one thing about it……it serves allot and it stays fresh forever – an amazing amount of moisture in here. One guest thought for sure there were cranberries in it, could be.
